During colonial era in Indonesia (17th century), areas such as Klaten were once the largest Javanese sugar industry centers in the world, competing with world sugar producers such as Cuba. Javanese sugar is usually made from coconut sap (Cocos Nucifera), not from the palm tree like palm sugar. The process begins by tapping coconut flowers, then the sap is boiled until it thickens and molded into blocks or cylinders.


Coconut sugar is primarily composed of sucrose, glucose, and fructose. This combination of monosaccharide provides a more gradual release of energy than white refined sugar that only have sucrose, so it causes a slower spike in blood sugar that white refined sugar. Coconut sugar is perfect as an alternative household supplies, or add to beverage such as coffee and milk, even baked goods or round out sweet recipes such as cookies, cakes, granule, energy bar, fruit dishes or add depth to savory recipes.
